THREE MILE CURVE — The Logan Center staff and residents celebrated “National Nutrition Month” to the theme of “Tasting the Rainbow”.
National Nutrition Month® is a nutrition education and information campaign created annually in March by the Academy of Nutrition and Dietetics.
Connie Hobbs, Dietary manager and Jenna Boytek, Dietician for Genesis Health Care, prepared a display of fruits and vegetables resembling a rainbow.
“The color was explicit and looked like a real rainbow which resulted in more than a pot of gold but rather a mouthwatering burst of flavor,” Betty Cohn, recreation director, said. “Connie and Jenna’s display was very colorful and served as a great activity that included staff and residents.” For residents on special diets, food was prepared for them using fruits with a little seasoning and a splash of color. Some of the fruits included in the rainbow were watermelon, honeydew melon, cantaloupe, kiwis, strawberries, blackberries, blueberries, and raspberries, two varieties of grapes, pineapple, two varieties of apples, lemons, oranges and limes.
For the vegetable display, foods used included cherry tomatoes, cucumbers, celery, carrots, three varieties of peppers, radishes, broccoli and cauliflower.
Posters were also displayed containing information about nutritional facts plus information to alert every one of types of food with cancer fighting nutrients.
“Not only was this special day delicious but educational also,” Conn said.
